Recipe: Roasted Lamb Pitta

This is just a little recipe that’s really easy and makes an amazing little snack. In fact, it really isn’t much of a recipe. More of a helpful hint! I nicked this from a woman I work with…I fell a little bit in love with her when she made me it!

All you need:

Pittas
Red onion
Mixed peppers
Lamb
Houmous (I recommend Co-Op Lemon & Coriander)

The lamb can be the left overs from a roast or you can cook it especially – with lamb I always prefer to cook it really slow to ensure it is tender. Roast it or slow cook it!

Slice your onions and peppers, drizzle with olive oil and roast for 45mins in a hot oven.

I microwave pittas for a minute to soften them so I can cut them open easily. Spread houmous generously inside.

Stuff in as much lamb and as many vegetables as possible – then enjoy! Easy, but absolutely delicious!
